Aloo baingan masala
Potato : 1(medium)
Bringal : 1 (medium)
Red , green or yellow capsicum : 1/2 cup(optional)
Tomato : 1(small)
Onion : 1 (medium)
Ginger-garlic paste : 2 tsp.
Green chillies : 2 (chopped)
Mustard & cumin seeds : 1 tsp.
Turmeric powder : 1 tsp.
Chilli Powder : 1 tsp.
Coriander powder : 1 tsp.
Oil : 2-3 tbsp.
Salt to taste
Fresh coriander leaves for garnishing
Preparation of Aloo baingan masala
• Wash Cut brinjals into 4 pieces & keep the baingan pieces in cold water
• Peel & cut the potatoes into 4 pieces
• Chop onions
• Chop tomatoes
• Clean & peel ginger and garlic – makea fine paste out of them
Method of co
Take a pan,heat it & pour oil into it,when the oil is hot enough ,add potatoes ,shallow fry it with little salt and turmeric & remove it from the pan ; do the same with baingan pieces .
Now add little oil into the pan,when the oil is hot add cumin seeds & mustard allow it to splutter ,now add the prepared ginger garlic paste and sauté for two minutes -Now its time to add chopped onion pices & sauté till onion turns transparent ,you could always add little salt while sauting onion,salt will accelearate the cooking process , now add tomatoes & green chillies ,fry till the tomato pulp mixes well .Add turmeric powder,chilli powder,& coriander powder and mix together and stir until the raw smell of the masala powder disappears & starts to leave oil ,now add shallow fried aloo (potatos )& baingan (brinjal )pieces .Saute for few seconds & pour little water to cook the vegetables & close the pan with a lid & cook for few minutes till the vegetables are soft & coated with gravy . Aloo baingan masala is ready Switch off the stove
Now our Aloo baingan masala is ready to be garnish with chopped coriander leaves ,transfer the Aloo baingan masala to serving bowl .
Serve Aloo baingan masala hot with chapattis
